Impress IX started with a simple conviction: the best food doesn't need a long explanation. It needs good ingredients, patient hands, and a kitchen that stays open a little later than usual.
We opened our doors in Dunedin with two counters — one for bread and pastries pulled straight from the deck, and another for the pantry items we'd actually use at our own table. Artisan loaves alongside local honey, small-batch preserves, cheeses, and olive oils chosen the way you'd choose for a neighbor.
Every morning we mix, shape, and bake. Every day we restock with care. It isn't a grand operation, but it is honest work — and we'd rather keep it that way.

Sourdough & Lean Loaves
Country loaves, batards, and ciabatta — all started from our own starter and baked on the stone. Crusty outside, tender inside.
